Ingredients
- 2 lbs (1 kg) sweet or sour cherries, stemmed and pitted (about 6 cups/1.5 L)
- 1 bottle (750 mL) Riesling wine
- 2 cups (500 mL) water
- 1 cup (250 mL) granulated sugar
- 1 strip lemon rind 4-x 1-in (10-x 2.5-cm)
- 1 short cinnamon stick, broken into several pieces
- 3 whole cloves
- 3 tbsp (45 mL) cornstarch
- ¼ cup (50 mL) kirsch or amaretto liqueur (or orange juice and ¼ tsp/1 mL almond extract)
- 2 tsp (10 mL) lemon juice
- ¾ cup (175 mL) sour cream or plain yogurt
- Fresh mint leaves for garnish

Preparation
Combine cherries, wine, water, sugar, lemon rind, cinnamon pieces and cloves in a large saucepan. Bring to boil over high heat; reduce heat to low, cover and simmer for 10 to 15 minutes or until cherries are tender.
Mix cornstarch, liqueur and lemon juice thoroughly in a small bowl. Stirring constantly, add cornstarch mixture to soup.
Increase heat to medium-low and stir soup constantly for 3 to 5 minutes, until soup thickens slightly. Pour into a large bowl, cover and chill until cold, about 2 hours. Serve soup cold in shallow soup bowls with dollop of sour cream in centre. Garnish with mint leaves.
Makes 10 to 12 servings.
Tip: If using sour cherries, add 1/2 cup (125 mL) more granulated sugar and omit lemon juice.
