Ingredients
|

|
3/4 cup (175 mL) finely chopped onion |
|
|
|
1 clove garlic, minced |
|
|
|
3/4 tsp (4 mL) chopped fresh thyme (or 1/4 tsp/1 mL dried) |
|
|
|
2 tbsp (30 mL) brandy (optional) |
|
|
|
1 egg |
|
|
|
1 tbsp (15 mL) Dijon mustard |
|
|
|
1 lb (500 g) lean ground beef |
|
|
|
Butter, salt and pepper |
|

Preparation
|
|
In skillet, melt 2 tbsp (30 mL) butter over medium heat; fry onion, garlic and thyme until onion is golden brown, about 8 minutes. Pour in brandy, if using, and cook until evaporated, about 1 minute. Scrape into bowl. Add egg, mustard, and 1/2 tsp (2 mL) each salt and pepper; beat until combined. Mix in beef until just combined.
Divide mixture into quarters; shape into 3/4-inch (2 cm) thick patties. Grill over medium heat, turning once, until no longer pink inside and digital thermometer inserted sideways into centre reads 160°F (71°C), about 15 minutes.
Makes 4 servings.
